The role of anthocyanin in biogenesis: purple sweet potato extract Bali cultivar studies in neurology aspects

Abstract
Anthocyanins in purple sweet potato found in Japan, Korea, and New Zealand in the last decades. Many anthocyanins are commercialized and processed to be beverages such as juice, alcohol, bread, and snacks. Anthocyanin is a secondary metabolite from plant and water-soluble, which gives purple, blue and red color in the plant tissue. Nowadays, more than 700 anthocyanins had been known, the differences are based on the amount and hydroxyl group position and methoxy from anthocyanidin, type, numbers and binding glucose position, acetyl glucose, and acetyl type. The antioxidant effect is used in the health area nowadays. The antioxidant effect had been proven in vitro or in vivo study.
